1. Thinking back to when you first opened Cioppino’s, did you imagine leaving such a legacy and impact on the Vancouver restaurant scene?
It was never expected. My intention was simply to open a restaurant that allowed me to express myself. It was a dream come true.
2. Do you have a favourite story or defining moment from the past 25 years that you will carry into your next chapter?
There are too many to highlight just one. It’s been a blessing to have the support of my staff, collaborators and loyal patrons.
3. What’s one dish that best represents the legacy of Cioppino’s?
It’s not about a single dish but a philosophy—tradition and evolution, respecting Mother Nature and true sustainability.
4. You’ve been in Yaletown for just over 25 years. How have you seen the neighbourhood change, and what will you miss most about the location?
The changes have been exponential! What I’ll miss most is the sense of community we built with our neighbours.
5. The culinary world is filled with challenges. Can you share one of the most defining lessons you’ve learned as a chef and restaurateur?
You can’t give up—you have to be resilient. You’re not just a craftsman; you’re also an accountant, a father, a friend and an empathetic leader.
6. What kind of messages have you been receiving from long-time customers, friends or other Vancouver restaurateurs?
They’ve been bittersweet. People are in disbelief that a successful business is closing down, but the continued support has been overwhelming.
7. Looking back on your legacy, what advice would you give to your younger self or someone looking to follow in your footsteps?
Keep your heart and feelings separate from the business side. It’s crucial to maintain balance.
8. Who has been a pivotal role model in your life, inside or outside the kitchen? How did their influence guide your career?
My mother, without a doubt. She taught me perseverance, hard work and humility—even when you reach success.
9. What impact do you hope your story will have on aspiring chefs or those considering bold career changes? What advice would you offer them?
Stay focused and follow your dreams. Be an empathetic leader who brings people together.
10. What role has your family played in your culinary journey? Are there specific family traditions or recipes that inspired your menu at Cioppino’s?
My mother’s influence (an amazing cook) is reflected in many dishes—not copied but reimagined to meet today’s nutritional and culinary needs.
11. What is an Italian ‘modo di dire’ (saying) that best reflects your philosophy on life or cooking?
Il meno è di più—less is more. Simplicity is everything.
12. Is there a phrase or mantra that’s carried you forward through all these years?
My mentor Armando Zanetti used to say, ‘We’re just cooks, and we must attend to our shop humbly every day.’ That has carried me through many years at Cioppino’s.
13. It’s been a few months since the announcement of Cioppino’s closing. How are you feeling as we near the last month?
Honestly, it’s getting harder to accept, but life is great. I feel lucky to be surrounded by so much love and care.
14. What’s one souvenir you’ll be taking from the restaurant?
The faces of every single person who shared this journey with me. Those memories are priceless.
15. What are you looking forward to in this next chapter of your day-to-day life?
Spending more time with my wife and family. If I opt to open another restaurant, I’ll aim to learn from past experiences and avoid old mistakes.
